Contigo, owned by native Texans Ben Edgerton and Andrew Wiseheart is modeled after Contigo Ranch in South Texas. I’d been dying to try this place and after many failed attempts to make it happen I was beyond excited when my friend won the 5 course dinner with wine pairing from Austin Tidbits. The concept is simple, according to the website: “Since we can’t have everyone down to the ranch, we wanted to do our best to bring the ranch to them.” And bring it they did. I opted for the vegetarian option this magical evening my taste buds were left singing.

1st Course: Root Vegetable Soup Wine Pairing: Castillo Perelada, Cava, Brut Reserva, DOC Cava, Spain

2nd Course: Three Beet Salad with arugula, caraway and parmesan Wine Pairing: 2009 Casa Morande, Chardonnay, Reserva, Casablanca Valley, Chile

3rd Course: Potato Gnocchi with Johnson Backyard Garden “Morning Harvest” Wine Pairing: 2007 Bodegas Benegas, Sangiovese, “Finca Libertad”, Mendoza, Argentina

4th Course: Roasted Cauliflower, toasted almonds, smoked greens, salsa verde Wine Pairing: 2008 Bodegas Benegas, Syrah, “Finca Libertad”, Mendoza, Argentina

5th Course: Stacked Chocolate Cake with coffee creme Wine Pairing: Mendoza Vineyards, Gran Reserva, Malbec, Mendoza, Argentina

30 Minute Meal: A Good Wok & Some Soy Vay Veri Veri Teriyaki

When you get home at 5pm and all you want to do is get dinner served so you can relax, pull out this easy and healthy recipe.

Wok

1 Tbsp. of Vegetable Oil

Soba Noodles

Can of Water Chestnuts

Broccoli

Edamame Beans (or any other greens)

Soy Yay Veri Veri Teriyaki

Prepare the soba noodles first, set aside. Add vegetable oil to your wok, once heated add broccoli.  Sautee broccoli to desired consistency. Add water chestnuts, edamame beans and lastly the soba noodles until heated through (about 2 minutes). Turn heat off and add desired amount of teriyaki sauce.

Orecchiette Pasta, Rosemary & ‘Smoke Apple Sage’ Vegetarian Sausage

Like most fellow vegetarian and vegan eaters, I too am always on the hunt for new wonderful tasting substitute meat and protein products, and I sure did find one in my discovery of Field Roast Grain Meat Co. products.  Not long after I stumbled upon the product online, I put in a call to Whole Foods to see if they had the product available. A gentleman from the meat department took the call and explained,

Oh yeah, we carry that product ma’am, and coming from a serious meat eater, I can vouch for the quality in texture and taste.

Unlike the majority of other vegan/vegetarian products containing mostly soy, the main ingredients are vegetables.

Orecchiette Pasta with Rosemary & Vegetarian Sausage Recipe

Ingredients:

Package of Orecchiette Pasta

3 tablespoons olive oil

Either onion or garlic or shallots, and amount to preference (thinly chopped)

2 or 3 links of ‘Smoke Apple Sage’ flavored vegetarian sausage

3 sprigs of rosemary (chopped)

about 1/2 cup of shredded parmesan

Instructions:

Cook orecchiette pasta per package, rinse and set aside

Chop onion or other and add to olive oil in heated pan, let brown slightly

Add sliced vegetarian sausage to warm

Add chopped rosemary

Top with shredded Parmesan

Salt to taste

*Try truffle oil drizzled on top or adding sauteed mushrooms
